‘Le Casot’ has been produced using traditional techniques, in miniscule volume and is the result of one exemplary 500 litre barrel. This particular piece of expensive oak, adds to the character of the grapes and improves what we already knew was excellent.
A showstopping wine, intensely perfumed with fleshy dark fruit, blackberry, violet and liquorice. These aromas are supported by textured tannins that caress, rather than bully and palate-enlivening acidity which balances the generosity of the fruit. Although delicious now, this wine will unfurl into something even more complex and winsome in two to ten years. It is superb paired with hard cheeses, roast beef, lamb and game (deer or venison)
