A well balanced, fresh wine that beautifully showcases the land where it was grown. The focus of this wine is fresh fruit and instant availability that is inspired by the rustic country kitchen of Southern France. Scents of herbs and dark, brooding hedgerow fruits are very well balanced. This wine is delicious on its own or served with charcuterie and cheese boards. It also pairs perfectly with white meats and game casseroles.
From 100 year-old Carignan, Grenache, Syrah and Mourvedre vines. A rich, opulent and fascinating wine with complex aromas of spice and clove. The palate is fleshy and mouth filling with attractive dark fruits, plum and cassis. Overall, it has impressive minerality and a fine structure that makes it very compelling to drink. It pairs perfectly with red meats or roasted game, casseroles and hard cheeses.
This wine is fortified five days into the fermentation process, arresting it and leaving a wonderful sense of sweetness from the unfermented grape juice. It offers deep red fruit aromas accompanied by a hint of sweet cooking spices, the perfect partner for a decedent chocolate dessert.
After six years of working with the ancient vineyards from which we make Immortelle, we realised that there is one that consistently delivers exceptional fruit.
Alongside the Bousquet family, we wanted to make an outstanding wine which exhibited this uncommon quality; this was the inspiration for ‘Le Casot’. Bottled in magnums, this wine is 100% Syrah and comes from Montoriol, a rocky and south-facing vineyard that sits facing the Pyrenees. At 200m above sea level, there is just enough altitude to appease the heath of the Mediterranean summer. This ensures that the grapes retain their vibrant aromas and refreshing levels of acidity. The small stone hut or ‘le casot’, that sits on the vineyard’s eastern boundary means that should you seek respite from the elements; one can find shelter and an idyllic place to enjoy lunch, amongst the largest number of old vines in France.
A show stopping wine, intensely perfumed with fleshy dark fruit, blackberry, violet, and liquorice. These aromas are supported by textured tannins that caress, rather than bully and palate-enlivening acidity which balances the generosity of the fruit. Although delicious no, this wine will unfurl into something even more complex and winsome in two to ten years. It is superb paired with hard cheeses, roast beef, lamb, and game (deer or venison).
