A bone dry, fragrant blend of White Grenache (90%) and Sauvignon Blanc (10%). It is packed with a natural freshness and offers elegant aromas of stone fruits, pear skin and a touch of peach. The Sauvignon Blanc adds a grassy twang and a mineral complexity. Made for the dinner table, this wine is a true reflection of the South of France. It emulates the cold breeze from the sea that chills the vineyards and adds freshness to an aromatic range. It pairs perfectly with a variety of dishes, with an everyday vigour that makes it the perfect early evening aperitif. That said, the rich roundness to the mid palate allows the wine to work very well with baked vegetables, poultry, Indian flavours and rich fish dishes.
This wine is a blend of Merlot, Carignan and Grenache. It’s deep in colour and packed full of dark forest fruit, blackberry, plum, blackcurrant and sloe aromas. On the palate, the true Languedoc character comes through – it is rich and concentrated with lots of garrigue spice and freshness which, makes the wine very approachable.
One of only four significant producers of Picpoul de Pinet, this wine is both gentle and refreshing. With notes of Mediterranean white peach, apricot kernel and zesty lime peel culminating in a silky mouth-feel and crisp, vibrant acidity. This acidity is why the wine is known locally as the ‘Lip Stinger’. Picpoul de Pinet is not only splendid with seafood and shellfish but also traditional Mediterranean dishes, cheese and chocolate. It is best drunk young and cool, between 8-10°.
A full, fat-bodied wine that demonstrates remarkable elegance. There is a notable intake of the garrigue herbs, thyme and lavender on the nose, accompanying the dark perfumed notes of the ripe Syrah fruit. It pairs wonderfully with a variety of dishes, in particular poultry, red meats, game and cheese.
Colibri ‘the hummingbird’ is a reflection of the Midi. The Midi is one of the most extraordinary regions, abundant and diverse in wildlife and nature. This diversity means that a wide range of wine styles thrive in this habitat. For this project, we have chosen grape varieties and micro-climates specifically to craft an outstanding rosé wine. The grapes have been dedicated to rosé production from the outset, picker earlier than usual to retain higher acidity levels compared to other grapes dedicated for red wine production. The result is a wine with delicious freshness, composed of floral Syrah from high-altitude vineyards, fresh Cinsault and soft Grenache to achieve an attractive mouthfeel and finesse.
It’s floral and fruity on the nose with bright flavours of raspberries, strawberries, cherries, and white peach. The wine has naturally high acidity and a cranberry bite, completing a wonderfully attractive wine. It pairs perfectly with seafood, summer salads and BBQ dishes or on its own as an early evening aperitif.
