No. 11, Blanquette de Limoux

With its persistent mousse, soft mouthfeel, and distinct green apple fruit character, Département’s latest addition is a benchmark example of the world’s original traditional method sparkling wine.

What is a little different is that we decided on a lower dosage than usual, one of only three grams, which sees our Blanquette exhibit an élan sometimes missing in overly sugared examples. A lower dosage also allows other aspects of the wine to emerge that might otherwise be too shy to make themselves known. A sprinkling of sea-salt appears to cling to the green apple, inducing the desire (in me at least) for some sweet clams or oysters with which to accompany.

However, you choose to consume our Blanquette, with food, with friends or alone with nothing but a bowl of olives, we hope you enjoy its breezy
aspect as much as we do.
