After six years of working with the ancient vineyards from which we make Immortelle, we realised that there is one that consistently delivers exceptional fruit.

Alongside the Bousquet family, we wanted to make an outstanding wine which exhibited this uncommon quality; this was the inspiration for ‘Le Casot’. Bottled in magnums, this wine is 100% Syrah and comes from Montoriol, a rocky and south-facing vineyard that sits facing the Pyrenees. At 200m above sea level, there is just enough altitude to appease the heath of the Mediterranean summer. This ensures that the grapes retain their vibrant aromas and refreshing levels of acidity. The small stone hut or ‘le casot’, that sits on the vineyard’s eastern boundary means that should you seek respite from the elements; one can find shelter and an idyllic place to enjoy lunch, amongst the largest number of old vines in France.

A show stopping wine, intensely perfumed with fleshy dark fruit, blackberry, violet, and liquorice. These aromas are supported by textured tannins that caress, rather than bully and palate-enlivening acidity which balances the generosity of the fruit. Although delicious no, this wine will unfurl into something even more complex and winsome in two to ten years. It is superb paired with hard cheeses, roast beef, lamb, and game (deer or venison).
